Why all carbohydrates are not created equal

Not all carbohydrate foods are ‘bad’ for you.  Many have followed diets that advocate cutting out most, if not all, carbohydrates.  Should you do so, your body will suffer.  The brain, nerve cells, retina and the red blood cells are normally totally dependent on glucose as their source of energy.  If they are not properly nourished and energized, neither are you!

Carbohydrates play other very important functions in the body outside of energy production.  They help the body make chemicals that are essential for life and cell membranes to function optimally.

You should want to know how the carbohydrate foods you eat are milled.  The milling process affects the bran and germ, two layers of a grain that contain most of the nutrients that when eaten, help to decrease the quick spiking of the blood sugar level.

The germ is rich in all B-vitamins except B12.  It is also rich in vitamin E, high-quality protein, unsaturated fats and minerals.  The bran contains mostly insoluble fibre, which is good for “flushing out” intestines.  It also has protein, traces of B-vitamins and minerals, especially iron.

Roller milling is a very common technique used by larger commercial mills and is a process in which the bran and germ, which make up 28% of the grain, are completely removed.  What is left is flour that is highly processed.  Many foods in the high-stress category tend to be roller milled, as opposed to those in the low-stress category, which tend to be stone ground.  ( See Solutions for Health, for more on this)

Stone grinding is a different process.  The grain is placed between two stones, one stone remains stationary and the other rotates, crushing the grain.  The entire content of the grain - the endosperm, bran, and germ - remain in their natural, original proportions.

Aim to choose whole-grain oats, breads, pastas and rices more often.  These more natural and real foods take a little longer to cook, and longer to break down in your body, but they provide you with essential nutrients.

Choosing whole-grains can help to:

  • Control your risk for heart disease
  • Control your risk for Type 2 diabetes
  • Manage your appetite
  • Control your blood sugar level
  • Control your cholesterol level
  • Achieve your health goals overall!

This is why all carbohydrates are not created equal.
